Authentic Thai green curry paste

The first restaurant I had ever worked in served Italian fare. Or at least what I thought was Italian fare. After the first time visiting Italy I then learned the food I was cooking there was the furthest thing from Italian. It was American food.limeI have been very fortunate to have trained and traveled throughout the World. I have met many Chefs that say they specialize in say French cuisine or Asian cuisine yet have never stepped foot in France or Asia. My experience has taught me that the only way to truly learn about a countries culture and cuisine is to travel and study there. Thai green curry.reedI choose Thai green curry paste because it’s ingredients are very easy to source and the method of preparation is fairly simple. greencurry2Traditionally it’s made with a mortar and pestle but you can easily use a food processor. The flavors are bright and fragrant. It’s a tradition curry paste used throughout Thailand.greencurryIf your not a fan of spicy food you take the seeds out of the chilis. This will reduce the heat index but will still have that authentic Thai flavor. green curry paste 1Thai green curry paste goes great with any kind of meat. Try it with beef, pork, or chicken. Yields: 10 servings

Ingredients

10-15 green Thai chillies

6-8 whole garlic cloves, peeled

1/2 cup sliced shallots

1/4 cup chopped lemongrass

1 tbsp cilantro roots, roughly chopped

2 tbsp chopped galangal

1 tbsp ground coriander

1/2 tsp ground cumin

zest of 1 kaffir lime

1 tsp shrimp paste

1 tbsp kosher salt

1/2 tsp white peppercorns

Directions

1. Place all ingredients in a mortar and pound into a fine paste with a pestle.

2. Can be kept for one month refrigerated in an airtight container.
